The land.

August Cider acknowledges that the land on which we gather, work, and live is the ancestral territory of the suq̀ʷabš “People of Clear Salt Water” (Suquamish People) and of the Nəxʷsƛ̕áy̕əm̕ "Strong People" (S'Klallam).

As business owners and community members, we are committed to continually deepening our understanding of the indigenous experience and to honoring the work of respectful relationship.

"Every part of this soil is sacred in the estimation of my people. Every hillside, every valley, every plain and grove, has been hallowed by some sad or happy event in days long vanished."
-Chief Seattle-

The orchard.

It is no secret that the best ciders are made with the best fruit.

Our orchard management revolves around soil health. By growing healthy soil we ensure our trees are resilient and can resist shocks from pests, disease, and climate.

Alongside soil health we promote a diversity of plant and animal species in the orchard which encourages pollination, pest management, and provides an edge habitat for native flora and fauna.

Throughout this process we are discovering that resilient trees produce exceptionally flavorful fruit. Our vision is to manage the orchard as an ecosystem service: building soil carbon, providing habitat, and increasing water infiltration.

The cider.

Our ciders are a true representation of place and time. Handcrafted in small batches, we create custom single varietals and cider blends from freshly harvested and pressed fruit. Fruit characteristics vary from year to year making each vintage unique.

Our finished products range from dry to off-dry, still to pétillant, clear to light haze, and aromas commonly of cherry, raspberry, lemongrass, lychee, ripe apple skins, loam, and dew.

We love to share these memorable culinary experiences and can't wait for you to join us!

Often the most meaningful adventures are unintended. This has been Dave's journey to August Cider. Diverse passions have coalesced here into a cohesive blend. For Dave, cidermaking fuses many of these including: a deep love for trees and ecology, technical alchemy, business as a force for good, and potential for community and relationship building. The craft is a true celebration of life.

Dave finds inspiration for his art, and cidermaking on the shores of the Salish Sea.
